Craig has over 25 years of experience as a restaurant owner, General Manager, and Executive Chef. Craig has worked as a chef at some of Chicago’s top restaurants including the Signature Room and the Pump Room; was the Executive Chef and Co-Owner of Weather Mark Tavern, a successful bar and restaurant in Chicago’s South Loop neighborhood; and has worked in Restaurant management throughout California, Sonoma and Napa, including Tra Vigne Restaurant in St. Helena and Tomatina in Santa Rosa.
